Orange Melts

These orange cubes melt in your mouth. No, stop smirking, they really do! They don’t “melt” in the way that sugar cookies melt, prosciutto melts, or even chocolate or butter melts. These cubes actually melt in your mouth. They’re soft jellies (softer than pâte de fruit!) that disintegrate into juice without resistance of any kind, but hold the cube shape at warmer temperatures. Now this is one of the true advantages of artisan confections. Large manufacturers won’t be able to package and ship something so soft, and their need to balance quality with practicality means that they’re unable to select only the best oranges. For these cubes, the entirety of their quality depends on the oranges’ flavor, so using regular concentrated orange juice will yield only sour, regular confections. I do wish they had a slightly longer shelf life though, since they must be eaten on the day they’re made.

    Those sound amazing. Is that sort of confection only in china, or are there similar things in the US?
